Over the years, Chalo Fernandez has become a household name at the roastery. And across the industry he is admired for his passion, enthusiasm and attention to detail. These characteristics are always evident in his work, but truly undeniable in our sophomore release of Lot El Volcan.
Chalo and his family have an idyllic plot of farmland in the mountainous region of Huila, Colombia. Lot El Volcan is situated in a more elevated area of Las Palmas and has undergone an extended fermentation process of about 36 hours. These complimenting factors along with Chalo’s hands-on guidance have developed a cup that is bursting with impossible to miss flavours. A true standout from a farm and producer that shares remarkably clean and unique coffees with us every time.
