Ana Sora - Ethiopia

After missing last year’s crop, Ana Sora - the roastery’s most iconic single origin release - has made its glorious return. For those unfamiliar, Ana Sora is a natural processed heirloom varietal from Ethiopia’s famed Guji Zone. Its cult following has everything to do with its flavour profile which defies explanation.
As one of the few privately-owned farms in Ethiopia, owner Esrael Degfa sorts cherries with precision in flotation tanks to separate the under-ripe cherries. This technique, the very high altitude that slows cherry maturation and an impeccable attention to the drying process are what make this coffee so special. With powerful notes of cherry and blackberry, this coffee is so clean, so complex and so sweet that you might be convinced we added something while roasting it.
